Carne Asada 
- 1.5 pounds rib eye, skirt or any other good grilling steak-2 serrano chiles-6 limes-5 cloves garlic, skins on-1/2 T salt
-roast garlic and chiles in a dry pan over medium high heat or grill until skin is dark and blistery.-Once cool enough to handle, peel the garlic and cut open the chiles and remove seeds and ribs. If you want the marinade to be super spicy, leave them in. -Cut limes in half and squeeze juices into a blender or food processor. Throw in the chiles, garlic and salt. Process until well blended but it can still be a bit chunky if you want.-Smear over both sides of the steaks and marinate for 1-2 hours.-Grill steaks until desired doneness. I like them medium.-Let rest for 5 minutes. Eat as is or slice against the grain for tacos!
These are super delicious with grilled  sliced jalapenos and pickled red onions and avocado tomatillo salsa!
